Blue crabs are in high demand as a delicacy for their subtle, sweet flavor and tender meat. Approximately 50% of all US crabs originate from Maryland. Nevertheless the same demand leads to them being one of the most heavily harvested seafood commanding high prices worldwide.
The Blue Crabs unique flavour is developed through a build up of fat stores or 'mustard', when preparing to hibernate during the colder seasons.
